We can’t get enough of it! We don’t grow it, but our allied farmers do! Our favorite way (because it is way too easy and delicious) to cook it is to bake a slice of it. Slice it about an inch thick and drizzle olive oil over it and season with salt and pepper. Sometimes we also sprinkle turmeric on it. It adds color but also some nutritional goodness. Turmeric is an anti-inflammatory and it works best when combined with pepper. So, why not? Bake it at 350-375 degree oven and when the edges look nice and crispy take it out and enjoy. We eat it as a side but also love it in rice wraps.
