Ramps, that wonderful time of the year!

We are back into ramp season! We’ll have ramps at market, if Mother Nature blesses us! There are so many wonderful things to do with them! And they are a spring delight!

For our first-the-season ramp dish we chose to create a plate of sesame noodles topped with ramps.

Recipe for noodle sauce:

Cook up some rice noodles and top with this sauce!

2T soy sauce or use tamari for GF
1T hot sauce (we use sriracha sauce)
1T sesame oil
1t rice vinegar
1t sugar or honey or maple syrup
1 clove of garlic minced
1T tahini (or almond butter, peanut butter or sunflour seed butter)
1/3 cup sesame seeds

Add chopped carrots and cucumbers and microgreens if you have them!

And top with those amazing ramps! (remove roots and chop up the rest … use the leaves and the bulb)
