We love this in many variations. But in ramp season, we add ramps!
Here’s the basic recipe featuring ramps, but we vary, depending on what we have coming in from the field. For example, instead of ramps, you can use chives, or chopped onions, shallots or green onions. You can add tomatoes or cilantro or even kale if that tickles your fancy.
1/3 c black beans
1 1/2 c corn meal
5T sunflower oil
1/2 t salt and pepper (to taste)
3/4 c almond milk
1 1/2 t baking powder
dash or more of tumeric
6T to 3/4 c of yogurt (vegan version, add a tablespoon of vinegar to 6T of almond milk)
handful of chopped ramps (or onions or chives, etc.)
handful of chopped red pepper
2T of chopped parsley
Add kale or cilantro or ???
Stir it up and drop by spoonfuls into well-oiled pan. Flip and fry until firm. Serve hot as a side with breakfast, lunch or dinner!
