Green tomatoes are something that shouldn’t be overlooked. Especially as we begin the wait for a delicious summer red tomato! Here are some plain and fancy ways to use them:
Chickpea Pan Bread
Fry green tomatoes with onions in a pan with oil. Salt and pepper to taste. Then add a batter made from equal parts of chickpea flour and water. When the batter firms up you can either leave it flat and whole or smush it around so that it more resembles scrambled eggs. Good additions to this can be a tablespoon of nutritional yeast to the batter, or a topping of fresh Parmesan cheese, or sprinkling of fresh cilantro.
If you enjoy making your own salsa, switch it up a bit and use green tomatoes instead. This is our favorite salsa recipe, but fool around with it to adjust the mixture to your taste.
3 medium tomatoes, chopped
1 medium onion, chopped
4 garlic cloves, minced (we like garlic)
1/2 cup of corn kernels
1/2 cup to one cup black beans (cooked)
1/2 cup of cilantro or parsley (parsley is especially good with green tomatoes)
salt and pepper to taste
sometimes I add a dash of maple syrup to the mix too
Toss and drizzle the juice of one lime over everything and let sit for a couple hours in the refrigerator before eating.
