Happy New Year!

That’s what it feels like when ramp season arrives … the year is finally beginning. Spring has finally sprung. I may still have on my insulated overalls, but the heavy jacket remains on the hook in the house. Ramps are painting the wooded hillside with the first green brush of the year and the birds and I are singing again.

Can you tell that winter felt especially long this year? For the next week or so we will not only be digging ramps, we will be eating lots of them. This morning I had my first ramp omelet of the year. Last night’s supper was baked potatoes with ramps and melted butter on top. Simple. Fabulous.
